Amaranth 'Red Aztec' has beautiful, vivid red foliage that looks stunning in the vegetable garden or allotment. Young leaves can be eaten raw in salad while older leaves are perfect for stir-frying.

Amaranth Red Aztec Growing Advice

Sowing Indoors

  • Amaranth Red Aztec can be sown indoors as a microgreen. Sow densely onto the surface of the growing medium, keep moist and place in a bright location. Harvest young shoots as soon as they develop their first set of true leaves.
  • You can sow Amaranth Red Aztec indoors into module trays from early spring, sowing a few seeds into each cell and covering very lightly with a growing medium.  From mid-spring onwards, you can harden off your plants and eventually plant them outside into their final planting position.

Sowing Outdoors

  • From Mid Spring onwards you can sow Red Aztec Amaranth outside into rows which are very, very lightly covered in growing medium.  Gradually thin the plants until they have a 45cm spacing - they will grow into big plants.  

Ongoing care and harvest

  • Be aware that these plants will grow tall and shad out surrounding plants.
  • Harvest young leaves for baby leaf salad whereas older leaves can be lightly stir-fried.
